Orange Zest Energy Balls
Energy balls are all the rage these days and are available in a lot of health food shops, with many cafés and other eating establishments making their own variety. They tend to be quite expensive though, but you can make them yourself very easily. This version is delectable, with a lovely orange zest flavour. Make up a batch at the weekend and then have them as a healthier sweet snack with a cup of tea at work all week, instead of putting money in the vending machine.
100 grams of dates (pitted)
100 grams whole almonds
75 grams desiccated coconut (25g as part of the mixture and 50g for coating)
Zest of ½ an organic orange
Juice of ½ an organic orange
1 teaspoon of honey or maple syrup
1 tbp of almond butter
50 grams desiccated coconut for coating
How to make:
put the dates into a food processor and pulse until they are finely chopped. Then set aside and put the remainder of the ingredients into the food processor (except 50g of desiccated, which is kept for coating). Pulse until everything is finely chopped. Then add the dates and pulse some more to mix everything together. Spread the remaining 50g of desiccated coconut out on a plate. Form the mixture into small individual balls in your hands and then roll gently in the desiccated coconut to coat them with coconut.
