This is a great recipe for making hummus, super quick.
1 can of chickpeas (400g/240g drained)
2 cloves of garlic
Juice of one lemon
1 tablespoon of tahini
1 teaspoon cumin
1/2 teaspoon chili powder or half of a chopped fresh chili (or more if you like it spicy)
Drain the can of chickpeas and put them into a bowl with sides big enough to use a hand blender in.
Peel and chop two cloves of garlic and add them to the bowl along with the rest of the ingredients.
Use a hand blender and pulse everything repeatedly until the hummus has a smooth consistency. If you don’t have a hand blender you can obviously use a normal blender, but using a hand blender can be quicker since you don’t need to transfer the hummus from the blender to a bowl. If using a normal blender, you may have to scrape down the sides a number of times.
For variety you can also add a grilled pepper, which you can buy at the supermarket. They are generally available in jars preserved with vinegar. (picture of hummus shown is made as per above recipe with one grilled pepper)
You can also add some olives instead of the pepper for variety.
Serve with some nice bread, with a sprinkle of black pepper, and some chopped tomato and a few salad leaves
